before i moved to nyc for uni, i made this all the time at home. my dad and my brother absolutely loved it and i've always loved baking and i'm the type of person who liked to bake but not eat what they made. and since my dad and brother like banana bread so much, it was perfect cause i know someone woudl eat them. the hosue always smelled so good after baking this!!! also, the way my dad tells me he wants some banana bread is to buy a bunch of bananas and put them at home and just let them ripe and i would get the memo and make more.

makes 1 8½x4½" loaf | total time: 30 minutes
BANANA BREAD
ingredients
- 1½ cups all-purpose flour
- 1¼ tsp baking soda
- ¾ tsp kosher salt
- 1 cup (packed) dark brown sugar
- ⅓ cup plain whole-milk greek yogurt
- ¼ cup / ½ stick unsalted butter, room temperature
- 2 large eggs (or substitute with chia egg)
- 4 large very ripe bananas, mashed
- ½ cup semisweet chocolate chips (optional)
method
- preheat oven to 350°, lightly coat loaf pan oil & line with parchment paper, leaving a generous overhang on long sides
- whisk flour, baking soda, & salt in a medium bowl
- use a whisk/hand mixer (i just use a whisk for a little nit of arm workout), beat brown sugar, yogurt, & butter in a large bowl until light & fluffy
- add eggs one at a time, beating to blend after each addition & scraping down sides & bottom of bowl as needed
- add flour mixture slowly & mix until just combined
- add bananas & mix until just combined
- fold in chocolate chips, if using
- pour & scrape batter into pan & smooth top
- bake for 60-65 minutes
- transfer pan to a wire rack & let bread cool completely (if you can resist) before slicing
